As Brescia's newly appointed President, Dr. Lauretta Frederking invites alumnae to
join her for a virtual coffee as she gets to know our alumnae and shares her plans

Join guest chef and alumna Emily Campbell ’13 & ’16 as she teaches you how to make
Chickpea Bolognese with homemade pasta. Emily will share the kitchen with much-loved
and retired Brescia food lab instructor, Lucy Mahood!
Emily Campbell is a registered dietitian and certified diabetes educator with a Master of Science
in Foods and Nutrition and works at Michael’s Hospital in Toronto. She is also the
owner of Kidney Nutrition where she specializes in renal and diabetes nutrition and
helps clients understand how nutrition plays an important role in managing kidney
disease and diabetes. Emily is also the author of The Complete Renal Diet Cookbook, a compressive guide for managing chronic kidney disease through diet. Emily helps
her clients through working with them one on one to navigate the complex world of
food and nutrition and teaches her clients how food can be delicious and nutritious
while achieving their health and nutrition goals; she will use these skill to share
how easy nutrition can be through a virtual cooking class.
