Tim D'Souza is Bresica's Executive Red-seal Chef. Tim D’Souza comes to Brescia with over 20 years of experience and brings his passion and knowledge that is necessary when developing a new food complex.
Sheena is the Executive Sous-Chef, managing food production in the Mercato. She came to Brescia after working for major hotel chains, such as New Castle Hotels and Resorts and the Marriot Hotel Group. Sheena also gained experience working for Oliver & Bonacini Hospitality, which is one of Canada’s leading restaurant and event groups.
Lori is the Hospitality Coordinator, managing the front-of-house service in the Mercato. She is a successful entrepreneur and service professional, who has owned and operated several businesses in London throughout her career.
Richard is a Chef de Partie, responsible for supervising the chefs in the Mercato. Before coming to Brescia, he grew his passion for the food industry by working for the Four Points by Sheraton, Windermere Manor, Copperfield’s Bistro and the Palasad.
Muthu is a Chef de Partie, responsible for supervising the chefs in the Mercato. Before moving to Ontario, Muthu lived in Atlantic Canada and working for Hotel Delta Fredericton and the Hilton Garden Inn in Halifax.
